My name is Mandy and I’d like to take a moment to introduce myself and Gingers Baking Co.

Our Story
For as long as I can remember, I’ve been spoiled with scratch-made desserts — the kind that come straight from the heart. My grandparents (on both sides!) and my mom, who’s brilliant in front of a mixer and oven, filled my childhood with the magic of homemade baking.
When I set out on my own, I discovered that same love of transforming simple ingredients into something special. Baking truly runs in my family, and once I started experimenting, tweaking, and creating recipes of my own, I couldn’t stop. I asked myself again and again: “Could this passion be more than a hobby?”
In July 2020, I answered with a leap of faith. I left my full-time job to follow my heart — and Ginger’s Baking Co. was born. The name? Inspired by the fact that two redheads (my husband and me!) bonded over a massive sweet tooth, a love of homemade goodies, and a dream of sharing that joy with others.
What started as a small pop-up, delivering whoopie pies, coconut macaroons, cookies, and cakes all around Orlando, has grown into something so much bigger: a brick-and-mortar bakery and coffee shop right here in Downtown Winter Garden.
Today, Ginger’s is more than just baked goods — it’s a gathering place. A space where locals and visitors, families and friends, and even four-legged companions all come together. Every treat we make is baked from scratch, with love, just like the ones that inspired me growing up.
